Paleo Pumpkin Spice Latte/Steamer
Ingredients: Makes 2-3 servings
1 1/2 cups full fat coconut Milk
1 cup filtered water (or more coconut milk at a ratio you like)
Note: Alternatively you could use 2 1/2 cups light coconut milk, cashew or almond milk…5 tablespoons pumpkin puree
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp nutmeg
2 tsp vanilla extract
3 tablespoons maple syrup or honey (or Stevia to taste)

1 scoop Vital Proteins Collagen Peptides (optional, but great for texture and nutrition)
Optional 1: Add a 1 tea bag of your favorite black tea (steep while heating, about 4 min.)
Option 2: Replace some of the water for a shot of espresso or 1/4 cup of brewed coffee for a Pumpkin Spice Latte. I like to use all full fat coconut milk when making lattes.
Method:
1. Place all ingredients in a blender. Blend till well combined and smooth.
2. Either pour over ice or heat in a small sauce pan till it just breaks into a boil. Sprinkle with a little extra nutmeg… Serve and enjoy!Can be stored in the fridge for 1-2 days.

What type of coconut milk do you use?
that looks delish! fyi, I stopped using canned coconut milk. I think I was getting sick from the additives, and I've found coconut milk really easy to make from shredded coconut.
The canned coconut I use has zero additives and is BPAFree. Just coconut and water. try Natural Value. They also have an organic one. I also make my own coconut milk, just depends what I am making.

I made this recipe and it was heavenly. Like drinking pumpkin pie.
I made coconut milk, and used fresh ginger and vanilla bean. I threw a whole clove into the blender which works fine instead of using pre ground. I also threw in a drop or two of ginger and clove essential oil while heating. I brewed a bag of chai in it and I think that's what made it great. It was good hot but after a night in the fridge it is even better cold.
I am aware of that. Another good option is getting it in the boxes if making it is to big a task for some and more cream is desired. Coconut milk is NOT something I use daily so I am not to concerened about it. I am more than happy for people to do what they are comfortable with.I have enough other limitatios to concern myself with. Glad you enjoyed the recipe!

Yum! I used organic soy because I like it and it's what I had on hand, skipped the nutmeg because I didn't have any (holiday fail) and served it to my husband who threw out his beer in favor of this drink (healthy win.
